Ingredients

Cornbread:

  • Cooking Spray
  • 2 Egg white
  • 1 c Milk, skim
  • ¼ c Oil
  • 1 c Cornmeal
  • 1 c Flour
  • 1 T Baking powder
  • 1 t Salt

Dressing:

  • 2 c Onion, diced
  • 1 ½ c Celery diced
  • 2 T Parsley, dried
  • 1 T Sage, dried
  • ½ t Black pepper
  • 1 t Garlic powder
  • 1½ lb Turkey breast, cooked, cubed (4 c)
  • 2 cans Chicken broth, 33% less sodium, 100% fat free

Directions

  1. Cornbread: PREHEAT oven to 425°F. MIX egg white, milk and oil. MIX dry ingredients together and then COMBINE with liquid. SPRAY a 9x13 inch pan with cooking spray.
  2. POUR into a 9x13 inch pan and BAKE at for 20-25 minutes.
  3. PREHEAT oven to 425˚F. Spray a 9x13 baking dish with cooking spray.
  4. Bring broth, onion and celery to a BOIL over medium-high heat in a large pot.
  5. MIX cornbread, parsley, sage, black pepper, garlic powder and turkey in a large bowl.
  6. ADD cornbread to broth mixture and TRANSFER to a baking dish.
  7. BAKE until heated through, about 25-30 minutes.
