Ingredients

  • 5 c Butternut squash, peeled, cut into 1-inch cubes
  • 2 Apples, Granny Smith, 1-inch cubes
  • ½ c Cranberries, dried
  • ½ c Brown sugar
  • 1 T Flour
  • ½ t Salt
  • ½ t Nutmeg
  • 2 T Margarine
  • ¼ c Water

Directions

  1. COMBINE all the ingredients, except the margarine and water, in a large bowl and TOSS.
  2. HEAT skillet on high and MELT margarine.
  3. ADD apple mixture and water to the skillet and COOK on high for 2-3 minutes or until boiling. STIR occasionally.
  4. REDUCE heat to medium and COVER. COOK 5 minutes or until squash and apples are semi tender.
