Ingredients

  • 2 c Flour
  • 1 ¾ c Flour, whole wheat
  • ¼ c Brown sugar
  • 4 t Baking powder
  • ¼ t Baking soda
  • ⅓ c Margarine, cold
  • 1 ¾ c Buttermilk, reduced fat
  • 1 ½ c Blueberries
  • 1 T Lemon juice
  • 2 t Lemon zest
  • Cooking spray
  • 1 t Sugar

Directions

  1. PREHEAT an oven to 375°F.
  2. In a large bowl, MIX flours, brown sugar, baking powder and baking soda.
  3. CUT in margarine until mixture looks like coarse crumbs.
  4. STIR in buttermilk until moist.
  5. FOLD in blueberries and lemon juice and lemon zest. TURN onto a floured surface and KNEAD 10 times.
  6. PLACE dough on a 10 x 15 inch baking sheet sprayed with cooking spray.
  7. PAT into a large rectangle. Cut into 16 triangles, but do not separate. SPRINKLE with sugar.
  8. BAKE at 375°F for 30-35 minutes or until golden brown.
