Ingredients

  • Cooking spray
  • ½ c Onion, diced, divided
  • 1 lb Ground beef, extra lean
  • 2 T Flour
  • ¾ c Beef broth, lower sodium
  • 2 T Worcestershire sauce
  • 1 T Ketchup
  • 1 ⅓ c Water
  • 1 ½ c Potato flakes, instant
  • ⅓ c Milk, skim
  • ¼ t Garlic powder
  • ½ t Black pepper
  • 1 c Cheddar cheese, reduced fat, shredded, divided
  • 2 cn Mixed vegetables, drained and rinsed (15 oz cans)

Directions

  1. SPRAY a skillet with cooking spray. RESERVE 1 T of onion then use the remaining to COOK until translucent.
  2. ADD ground beef and COOK until well browned.
  3. RINSE and DRAIN beef/onion mixture and RETURN to skillet.
  4. ADD flour and MIX well. ADD ¾ c broth, Worcestershire sauce and ketchup. BOIL then SIMMER for 5 minutes.
  5. In a saucepan, BOIL 1 ⅓ c water.
  6. ADD potato flakes and STIR well.
  7. REMOVE from heat and add milk and spices.
  8. MIX in 1T diced onion and ½ c cheese.
  9. In an 8x8 dish, SPREAD the beef evenly at the bottom. TOP with, 2 cans of mixed vegetables, potatoes, and ½ c cheese.
  10. BAKE at 375°F for 20 minutes and let SET for 5 minutes.
