Ingredients

  • Cooking spray
  • 1 lb Chicken breasts, boneless, skinless, cut into bite-sized pieces
  • ½ t Black pepper
  • ¼ c Red onion, sliced
  • 2 Garlic cloves, minced
  • ½ c Chicken broth, fat free, low sodium
  • 4 oz Green chilies, drained and rinsed
  • 2 Limes
  • 1 cn Black beans, drained and rinsed (14.5 oz)
  • 2 c Brown rice, cooked
  • ¼ c Cilantro, fresh, chopped

Directions

  1. SPRAY a large skillet with cooking spray and HEAT over medium high heat.
  2. To the skillet, ADD chicken, black pepper and red onion. COOK until chicken is cooked through, about 6 minutes. ADD the minced garlic the last minute of cooking.
  3. ADD chicken broth, green chilies, lime zest, lime juice, black beans and cooked rice.
  4. Bring mixture to a simmer and COOK for 10 minutes to absorb some of the liquid.
  5. SERVE mixture in a bowl and garnish with chopped cilantro.
