Ingredients

  • 1 can Pinto beans, drained and rinsed (15 oz)
  • 1 can Diced tomatoes, drained and rinsed (14.5 oz)
  • 1 can Corn, drained and rinsed (15 oz)
  • ½ c Onion, chopped
  • 1 lb Chicken breast, trimmed, cut into bite sizes pieces
  • 1½ c Taco Seasoning, Get Fresh! recipe
  • ½ c Cheese, Mexican blend, shredded, reduced fat

Directions

  1. PREHEAT oven to 375°F. In a large bowl, COMBINE all the ingredients and MIX well.
  2. PLACE 1 c of the mixture in a foil square (12 inch x 12 inch). FOLD up and PINCH the seams closed so it does not leak.
  3. PLACE the packets on a baking sheet and BAKE for 25-30 minutes.
  4. Once the chicken has cooked, OPEN foil packets and TOP each packet with 1 T of cheese.
