Ingredients

  • Cooking spray
  • 2 c Rotini, whole wheat, uncooked
  • 1 lb Chicken breast, boneless, skinless,  cut into chunks
  • 1 c Tomatillo salsa
  • 1 c Corn, frozen
  • 1 c Bell pepper, red, cut into strips
  • ½ c Mexican style cheese, shredded, reduced fat

Directions

  1. COOK pasta as directed omitting salt and fat.
  2. SPRAY a large skillet with cooking spray and HEAT on medium-high.
  3. ADD chicken and COOK for 6 minutes.
  4. STIR in salsa, corn and peppers on medium-low heat for 7 minutes or until chicken is done.
  5. DRAIN pasta and ADD to chicken mixture; mix lightly.
  6. TOP with cheese, REMOVE from heat and COVER to allow cheese to melt.
