Ingredients

  • 8 oz Rotini, whole wheat (2 c dry)
  • 1 T Olive oil
  • 2 c Pepper and onion mix, fresh or frozen
  • 3 Garlic cloves, minced
  • 1 ½ c Mushrooms, sliced
  • 1 ½ t Basil
  • 1 ½ t Oregano
  • ¼ t Black or red pepper
  • 28 oz Crushed tomatoes
  • 6 oz Tomato paste

Directions

  1. In a stockpot, COOK pasta, as directed, omitting salt and fat. DRAIN and SET aside.
  2. In another stockpot, HEAT 1 T olive oil over medium-low heat.
  3. ADD pepper/onion mix, garlic cloves and mushrooms. SAUTÉ for 3-4 minutes.
  4. ADD spices and SAUTÉ for 1 minute.
  5. ADD crushed tomatoes and tomato paste. SIMMER on low for 15-20 minutes.
  6. When cooled, PLACE 1/2 c cooked pasta and 1/2 c marinara sauce in a freezer safe bag/container for individual servings. LABEL, DATE and FREEZE. Allow pasta to thaw then REHEAT in the microwave and SERVE.
