Ingredients

  • 1 lb Pork loin
  • ½ c Chicken broth, low sodium
  • ½ t Pepper
  • ½ t Cumin
  • 1 t Chili powder
  • 1 t Oregano
  • 1 Lime, juiced
  • 1 c Onion, chopped
  • 1 Garlic clove, minced
  • 2 Jalapeños, seeded, diced
  • 8 oz Tomato sauce, no salt added
  • 1 can Black beans, rinsed and drained (15 oz)
  • ¼ c Cilantro, chopped
  • 12 Corn tortillas, warmed when ready to serve

Directions

  1. PLACE pork in a 5 quart slow cooker.
  2. ADD broth, pepper, cumin, chili powder, oregano, lime juice, onion, garlic, jalapeños, tomato sauce and black beans.
  3. COOK on high for two hours or low until meat has reached 145°F. Mixture may continue to rest in a warm slow cooker until ready to eat.
  4. SHRED pork with a fork. ADD cilantro and PLACE 1/3 c pork mixture on each corn tortilla. TOP with optional toppings such as lettuce, tomato, sour cream, cheese (reduced fat), guacamole, and cilantro.
