Ingredients

  • 1 T Olive oil
  • 1 c Carrots, sliced
  • ½ c Onion, diced
  • ½ c Celery, diced
  • 2 ½ c Chicken broth, lower sodium
  • 2 ½ c Water
  • ¼ t Pepper
  • 2 t Oregano, dried
  • 1 ½ t Rosemary, dried
  • 1 ½ t Thyme, dried
  • ½ t Garlic powder
  • 4 oz Spaghetti noodles, broken
  • 2 c Chicken, (2-15 oz cans drained/rinsed)

Directions

  1. In a large stockpot, HEAT 1 T oil over medium high heat. ADD carrots, onion and celery. SAUTE until softened, about 5 minutes.
  2. ADD broth, water and spices. Bring to a BOIL.
  3. ADD noodles and chicken, REDUCE heat and SIMMER until tender, about 8-10 minutes.
