Ingredients

  • 1 ½ c Cheddar cheese, grated, reduced fat
  • 4 T Margarine
  • ¾ c All purpose flour
  • ½ t Salt
  • ½ t Crushed red pepper flakes
  • 4 T Evaporated milk, skim

Directions

  1. PREHEAT the oven to 350°F degrees.
  2. In a bowl COMBINE the cheese, margarine, flour, salt, and red pepper and MIX until ingredients resemble coarse crumbs.
  3. ADD the evaporated milk and STIR until dough forms a ball.
  4. On a lightly floured surface, using a rolling pin, ROLL the dough into an 8x10 inch rectangle that is 1/8 inch thick.
  5. With a sharp knife, CUT the dough into long, thick strips, 1/4” to 1/3” wide (DIPPING the knife in flour after every few inches ensures a clean cut).
  6. Gently TRANSFER the strips to an ungreased cookie sheet. The straws can be any length.
  7. BAKE the straws for 12-15 minutes, or until ends are starting to brown.
  8. REMOVE from oven and COOL. SERVE at room temperature. Keep straws REFRIGERATED in a sealed container.
