Ingredients

  • 1 Zucchini, medium, quartered thick
  • 1 Bell pepper, red, green, or yellow, sliced thick
  • 10 Cherry tomatoes
  • 8 oz Mushrooms, whole
  • 1 Onion, cut into thick chunks
  • 1 c Pineapple, chunks, drained, reserve juice
  • ½ c Olive oil
  • ½ c Soy sauce, reduced sodium
  • ¼ c Pineapple juice (reserved from canned pineapple)
  • 2 T Honey
  • 10 Wooden skewers

Directions

  1. PLACE all the vegetables and pineapple in a large bowl.
  2. In a small bowl WHISK olive oil, soy sauce, pineapple juice and honey.
  3. POUR marinade over the vegetables and pineapple, then let it SIT for at least 30 minutes.
  4. WHILE the vegetables and pineapple marinate, SOAK the wooden kabob stick in water.
  5. PLACE the veggies and pineapple on sticks, 8-10 pieces on each kabob, GRILL or COOK under the broiler on HIGH for 8-10 minutes or until tender.
